Bess Dallal, M.S., L.Ac., has been studying and practicing natural medicine for more than twenty years. Her clinic, Human Nature Medicine, has served the Portland community since 2009 — every formula in our tea library was first developed there, made for a specific patient with a specific need.
She trained in Traditional Chinese Medicine and Western herbalism, and her work sits at the intersection of the two. She thinks about tea the way she thinks about a tincture: the leaf is doing something specific in the cup, and the right pairing — a honey, a biscuit, a moment of the day — is what makes it land.
At Besteas she chooses every tea, defines every pairing, and writes the brewing card that ships with each box. She drinks what she ships, and she ships what she drinks.
