Matcha is shade-grown for three weeks before harvest, which spikes its chlorophyll and makes that uncanny electric-green color. Whisk with 70°C water in a U-motion until you have a fine layer of foam. The good stuff tastes savory at the start and sweet at the finish — that's the umami doing its work.
